Yes, in most cases we remove the old counters, check cabinet level, shim as needed, and install the new slab on top of the existing boxes. If the cabinets are unlevel by more than 3/8 inch across the run, we may need to add a sub-top or shim the run before templating.
What about seams in long counters?
Most kitchens have at least one seam, typically over a dishwasher or in a corner. We place seams where they are least visible, use color-matched adhesive, and set them tight enough that you can run your finger across without catching. The fabricator approves seam locations before cutting.
